There is no required project count. As an editing starting point, a fresher can choose two or three relevant projects and see whether each adds distinct evidence. Someone with substantial work experience may need fewer, or no separate project section. Keep a project when it adds relevant evidence you can explain. Remove a weaker entry before shrinking the text to fit more names.
